Spicy Salmon

Ingredients

  • 4 x Salmon portions
  • Cajun seasoning
  • A little oil

Method

  1. Rinse salmon, pat dry using kitchen paper
  2. Dust all sides of salmon with cajun seasoning
  3. Heat oil, sear salmon on all sides for ½ minute
  4. Reduce heat and continue to cook in pan for 8 minutes or transfer salmon to baking tray and place in pre-heated oven 200° C/400° F/ Gas 5 for 8 minutes

To Serve
Serve with baked or boiled potatoes, vegetables of choice or salad

This recipe makes a great filling for sandwiches, roll s and wraps.
Simply allow to cool and use a fork to break into flakes.
Mix with a little mayonnaise and use to create a delicious lunchtime snack.


Smoked Salmon and Pasta

Ingredients

  • 200g pack of smoked salmon – cut in ribbons
  • 200g fresh linguine or pasta of choice
  • 1 small onion – finely chopped
  • 250g of mushrooms – sliced
  • 170 ml cream
  • Fresh basil (optional)
  • A little oil
  • Salt and freshly milled black pepper

Method

  1. Heat oil, lightly fry onion until transparent
  2. Add mushrooms, cook for 3 minutes
  3. Add cream, simmer gently for 2-3 minutes to reduce – season
  4. Meanwhile, cook pasta according to kind – drain well
  5. Add smoked salmon and torn basil leaves to sauce – combine pasta and sauce

To Serve
Serve with salad and garlic bread
